I don't think you'd just see the word "menu" as the title of a course module.

I have seen this used a lot - especially in multi-course menus (5,6,7 courses or more)

coordination of dishes

...might be what we're looking for. See link below:

"Multi tasking is importance of practical exam in one day. Time management, coordination of dishes, putting the whole menu together is the main focus. Elements can be flexible as long as blocks are covered in the whole program. 5 hour timeframe works for most students."

I think this is probably the easiest and most appropriate translation.

You could, of course, also use "courses"

I don't think that order or sequence needs to be used, as a menu is gives precisely the order of serving.

The trainee chef will probably have been requested to make a menu for a specified occasion - consisting of a starter (possibly also an amuse gueule), soup, main dish + sides + salad (or fish dish and meat dish + sides + salad), a dessert and possibly also something like a cheeseboard to finish.

The term menu is used throughout - for preparation, planning & policy, costing based on ingredients, compilation with healthy foods, varied menus and outdoor catering, menu production requirements, menu structures and loads more.
