I totally agree with Daryo:"cost and profit sectors" doesn't make any sense at all. Cost and profit are not sectors, and "restauration sociale" neither. "Restauration sociale" does not exist. As a french chef what would definetely make sense to me is to compare chefs from both collective catering and restaurants, and in French it is :"restauration collective et restauration commerciale"
Example sentence:
L'enquête a été menée auprès de chefs venant aussi bien de la restauration commerciale que de la restauration collective

It's more or less clear that "sectors" are sectors of activity, but why some sectors would be labelled "profit sectors" and others "costs sectors" makes no sense. Someone just invented these two expressions, and you definitely need to look for clues in the rest of the ST to make any sense of it.
