Parece que simplemente están indicando un “ascenso pronunciado” de la estadística. Es decir, la gráfica muestra los diversos grosores de las partículas de arena... y simplemente indican donde hay una “cumbre”, “spike” en el sentido de “cumbre” en la estadística. N.B. que en tu contexto también usan “peaking around the medium sand...” Es decir, “peaking” = “alcanzar su apogeo” “alcanzar los máximos valores”...

When one plots a graph of say production versus time and its value at one particular spot spikes, it means that has occurred a sudden increase, and returns to more suitable value. the spike value can be an indication of something good or bad, depending on the analysis being made.
