The xxx colour number is a value which is related to the relative reflectivity (degree of redness) across the meat region. This value is generally in the range of 40 – 60 for porcine eye muscle. The actual grade attributed to a colour value is internally setup to match the colour grading system used. The xxxx grading probe is set to a default standard based on the American NPPC colour standard. If a different standard is required then the probe is able to be programmed to an alternative set of grading reference numbers.
