lit. expl. the artisanal mini crêpe makery
Explanation:
There is no English word for this, you will need to consider the best strategy.

Based on my googling, the word is most often used for 'artisanal' bistros specializing in plättar (small crêpe-like pancakes popular mainly in Sweden and Finland; https://sv.wikipedia.org/wiki/Plättar)

I suspect that in your context, 'plätteri' may be used because the establishment wants to signal an artisanal vibe, in which case the word may not actually refer to anything concrete. That said, potentially they could also have a section of their kitchen dedicated only to making plättar, with a designated chef for the purpose.

nice made up term.

It could be anything, as long is it is related to crêpes / pancakes -- depending upon what the ristorante wants it to be.

neutral  SafeTex: I think this suggestion would be a better with "crêperie" if I may say so

-> Great point that I didn't consider, although expected size could be an issue ;-).

agree  Deane Goltermann: I do like the 'mini-crepe' idea, esp. since it is a thing you can google and it is more European (for the local market). Being the prosaic type I might settle for 'Kitchen' instead of 'makery,' but if you're in a poetic license mood ...

agree  Eva Bolinder: Depending on where you live in Sweden, full sized, smaller, and ovenbaked pancakes are called different things. Pannkakor/plättar/ugnspannkaka vs plättar/småplättar/tjockpannkaka. Heated discussions can occur! ;)

välsmakande plättar från plätteriet
tasty small Swedish pancakes

Explanation:
Not all that artisanal as a translation, but it might work for you. ;-)

” If you’ve ever had the pleasure of tasting a Swedish pancake, it’s most likely to have been one of these. Classic pannkakor are sweet and buttery with a general thickness that’s somewhere between an American-style pancake and a French crêpe.

”Plättar are essentially the same as klassiska Svenska pannkaka, except they’re smaller and whisked with less sugar. Traditionally, they were a festive food fried in a special pan (called plättpanna) that is flat with multiple wells to cook the batter.”

home-made pancake-fritter selection

Explanation:
crêperie might - the Bernadotte Royal Family permitting - shift the pancaking emphasis to France, whilst my mind turned to the churrería-fritter Spanish vacationing influence on Sweden and Finland.

Example sentence(s):
  • En churro eller churros är ett spanskt, friterat bakverk som påminner om munkar eller dough nuts.
  • Your favorite churros have been turned into pancakes! Churro Pancakes are easy and extra fluffy cinnamon pancakes.

Reference information:
I won't jump directly into the fray on this fun little language question, but will add my 'fifty cents' to hopefully illuminate your question. In the US, pancakes of this size are actually colorfully (not colourfully) referred to as silver dollar pancakes. Thinner versions of the famous thick US pancakes the (close to) size of the mostly unused dollar coin. Served with strawberries and cream ... sounds like a trendy restaurant dish!!?

Though this still doesn't say what you should call the kitchen corner that makes these things! Sorry ;-)
