If asada is roast and a la brasa means chargrilled, then that sounds like they are using two methods to cook it!

Hi, C! It's "roast" (also "asado" in Spanish) when it's cooked in the oven. "chargilled" doesn't really exist! It's just a common abbreviation of charcoal-grilled, which is most often used. "Brasas" actually means "embers", i.e. burning charcoal (or coal, but we don't tend to cook using coal as such" without the flame. Hence, charcoal-grilled. Hopes this clarifies things.

Hi Margaret Thank you for your answer - seems to be the right one based on all the agrees :-) One thing maybe you could explain for me: why do they say "asadas",which is "roast" (isn't it?) when grilling with charcoal is surely not roasting but grilling ?? Also, does "a la brasa" mean "chargrilled" as well - or is "a la brasa" only "charcoal-grilled"? Thanks very much. C

agree RichardDeegan : Down here, "A la brasa" is cooked (on a spit) over charcoal embers, with its juices sealed in, as opposed to "grilled", which is on a "parilla" (grill). Also delightful is "A la brasa con leña", but not much wood floating around Lima

"asado" has more than one correct translation, so "a las brasas" is a better indicator.

In the Collins Spanish-English Unabridged Dictionary, we have:

"asado: (culin) roast, antes de, roasted; (carne asada) roast meat; (carne asada al horno) baked; (carne asada a la parrilla) grilled, broiled (EEUU)"

Then, with "a la brasa":

"carne a la brasa: grilled meat, barbecued meat"

I vividly remember in Lima, Peru, about 4 blocks from my girlfriend's house (later my wife and mother of our four children), there was a little pollería that would have "pollo asado a la parrilla" and it was cooked on these rotating and revolving grills, and was definitely grilled chicken, and was sometimes barbecued and sometimes not, but definitely grilled. And it was not cooked with coals or embers.

I would suggest to cover both components ...

As the meat cooks, it will char in the lines typical of chargrilled meat, but without the barbecue aroma of meat cooked on a chargrill. Chargrills ...

grilled meats / barbecued meats

grilled already implies the use of charcoal or embers. It will be slightly redundant, unless you want to specify the method used.

Chargrilled Meat

I would just say "chargrilled meat". I think the "asadas" is surplus to requirements. The spanish don't tend to "roast" meat as much as other nationalities do using the traditional method of roasting in the oven. I have seen "asado/a" to refer to barbequed/grilled food on many menus.

I think it'll be obvious (to the restaurant customer) that the grilling method will be different there from the standard domestic type of grill - it's a sort of mixture of grilling and roasting

Asado is a technique for cooking cuts of meat, usually consisting of beef alongside various other meats, which are cooked on a grill (parrilla) or open fire. Asado is quite popular in the Pampa region of South America, and it is the traditional dish of Argentina, Uruguay, Chile, and Paraguay.
