Comfit vs. confit I was looking for this translation myself (I have a "Confierte Bachforelle") and was thrown by its use as a verb in German. Personally I think it sounds unnatural in EN so I'll be saying "river trout confit". That is coNfit and not coMfit - unfortunately I can't access the OED entry but from my research it seems that "comfit" is sweet - a fruit or nut preserved in sugar whereas "confit" is preserved in fat - usually meat or vegetables.

I know this is an old post, and I don't want to stir up trouble - just thought it would be useful to point out for others that stumble upon this entry! :)

According to the Oxford English Dictionary, the modern spelling os "to comfit" (not to confit).

pepper confit

So ist es in vielen meiner Kochbücher enthalten und bekommt auch viele Google-Treffer.
Z.B. auch als red pepper confit, bell pepper confit, usw.
Die Paprika wird dafür mit anderen Zutaten (vor allem Gewürzen) sozusagen eingekocht.
