A little bit more of context, please Elizabeth, I must agree with Rebecca. We are going to need a little bit more context to understand how is it that "gulp" is found in that text. Of course, it has to do with saliva as Rebecca has pointed out, but it will depend on how the word appears in the text that we will be able to help you.

Context please Offhand, I wouldn't say that gulping necessarily has to do with saliva. It could be more expressive and focus on the sound in connection with nervousness or the feeling that one doesn't know what to do. However, we won't be able to say definitively without knowing how it's used and in what broader context.
