Pescado en hoja de plátano

Supongo que Bourgeois, y teniendo en cuenta google imágenes, se refiere al Bourgeois fish, que en español solo lo he encontrado como Lutjanus sebae, aunque en inglés es sinónimo el emperor red snapper. He visto que lo traducen simplemente como pescado ya que en español no queda muy bien poner el nombre en latín.
