This is an INCORRECT metaphor in this context. Lindsay is using a folksy metaphor about "getting out ahead of skis," and then says something like "so to speak," "if you know what I mean," to test the audience's understanding of the metaphor in this context.

does it definitely read "as you were" rather than "as it were".

The first sentence is poorly expressed in English and I don't know what it means.
