hands-on, in the ring
Hands on:
1 : relating to, being, or providing direct practical experience in the operation or functioning of something
Cancha: 1. f.
Like a boxing or wrestling RING, used figuratively in my suggestion.

practical experience/ first-hand experience
I think this expresses the nuance in meaning in English: the fact that the experience is practical, a first-hand experience, without a lot of theory where you are learning by doing.
The addition of the word ´experience´ would go well in the context of the previous sentence: ´Así fue siempre el aprendizaje en la empresa: a practical/ first-hand experience.
I hope this helps.

Hands on, in the field.
