The multi-seeded, coiled pod of alfalfa gives the seeds a characteristic shape: the radicle end of the seed is pointed or rounded, the seeds are twisted or curved in edge view

coupe here is not in the sense of "to cut", but in the sense of "view" (see 2. B. 2). Reading the end of the paragraph, it seems we are looking at an image ? https://www.cnrtl.fr/definition/coupe
