Pensar el vino pasa por redefinir sus significados sin dar demasiadas cosas por supuestas.

The author wants to redefine the world of wine. New meanings imply new realities, etc. He's looking for something that truly defines the essence of the concept. I thought of Feel The Wine, but he's not happy with it. I'm not happy with Think Wine. I can provide more examples if need be, the dossier is full of them.
All ideas and opinions greatly appreciated, TIA :)

I've basically said to him, "Look, Think (the) Wine just doesn't cut it, you're not happy with Feel (the) Wine (maybe he can't give a deeper meaning to 'sentir', I don't know...), so I'll consult Proz and give you the list of terms and explanations my fellow translators have come up with, and you choose." Pfff... :D

My take The issue here is not one of translation. The problem is with the client, who wants you to reinvent the wheel. The wine world is already full of "Pseud's corner" type pretentious waffle and piffle. All I can say is, rather you than me :-)

Rethinking/redifining wine

You say you don´t like “think the wine” (I wouldn´t like it either, it doesn´t make sense), but how about “rethinking/redefining wine”? “Rethink/redefine” based on your own information (= The author wants to redefine the world of wine) and the definition below provided by the Cambridge Dictionary.

REDEFINING WINE
In the cellar of XXXXX picking date and temperature are crucial, no chilling means no warm fruit. Our wines want as much natural acid as possible, thus the fruit is picked earlier every year. Once the fruit arrives in the cellar it is crushed, usually by foot, leaving whites and reds on skins until they are pressed.
No recipe or rules, it’s all feel.

Hi Toni. My client went with your answer, but has decided to stick a hyphen in there!?!?! He says the hyphen gives him the nuance he wants. Oh well, poetic licence and all that... :D It's definitely up there in my top ten of the worst phrases I've ever had to translate :D But, so long as he's happy... Thanks!

In context - and in accordance with Toni's comments, which I endorse - this would seem to be the best translation.

(You also should have posted to the actual term you wanted translated, in order to avoid confusion.)
