I am translating a degree certificate, which is signed by the Diirettore-Generale and the Rettore. I'm happy to translate the latter as 'Rector' as we use that for British universities too, but what would the Direttore-Generale be? The usual terms (General Manager or Director-General) would not be appropriate for a university. Would it be Chairman? Thanks for any help.

I have used this term often in Clinical Trial documents including contracts. This is a purely administrative post and the title is appropriate in UK-EN. You may want to wait for a more expert opinion, however.

: principal of a secondary school. not a university /have just seen your refs. the use of principal is definitely not global. In the US, it's only used as head of a secondary school. It's not even globally used in the UK.

As I said above, I agree with vice-chancellor but principal does also seem to be an option.

Nelle università in Italia la figura del direttore generale è stata introdotta dalla legge 30 dicembre 2010, n. 240, in sostituzione del direttore amministrativo. È disciplinata dagli statuti dei singoli atenei, nell'ambito dei principi stabiliti dall'art. 2 di tale legge.
Il direttore generale deve essere scelto tra personalità di elevata qualificazione professionale e comprovata esperienza pluriennale con funzioni dirigenziali. The Chancellor and Vice-Chancellor
The Chancellor is elected for life as the constitutional head of the University although the role is now largely ceremonial. The Chancellor is elected by the Senate, which comprises all senior graduates of the University. In modern times, the Chancellor's principal public role has been the conferment of Honorary Degrees at an impressive annual ceremony, but this is only a small aspect of his continuous overall involvement with the University.
HRH The Duke of Edinburgh stood down as Chancellor at the end of June 2011 having served since election in 1976. An election for his successor took place in Cambridge on Friday 14th and Saturday 15th October 2011.
The Vice-Chancellor is appointed for a period of seven years and is the University’s main academic and administrative officer.
