I prefer "rector" to Vice-Chancellor, but I'm Scottish.

Finland apprently uses "rector" too:
"Keijo Hämäläinen appointed as the Rector of the University of Jyväskylä"

But I suppose "Vice Chancellor" will be more popular. The actual status and duties of the posts may vary from one institution to another.
