Does this mean that, within the research, they include themselves
as part of the families being studied or does it have a different meaning, that escapes my understanding?
It seems rather strange for a research company to include themselves in a project!!

(Explanation: I thought of this earlier but didn't have time to post it, and meanwhile Ana posted a similar idea which I thought was good so I was going to leave it. But she's suggested I post it, and I suppose it's useful to have a range of options to choose from.)
I entirely agree with Bea and Ana about the meaning. This is how I would express it, and it's used in the literature on ethnographic research. Since it's a bit informal in register, it's sometimes put in inverted commas in academic texts, but in your context I don't think that's probably necessary.

el autor defiende que las técnicas cualitativas “clásicas” (los grupos de discusión, las entrevistas en profundidad…) son insuficientes cuando el reto es la innovación y propone utilizar “nuevas” técnicas; en particular, las entrevistas etnográficas porque entiende que permiten llegar a dimensiones clave en el conocimiento de los usuarios: sus actitudes, las actividades que practica, sus necesidades, sus motivaciones…
Curiosamente, desde hace un tiempo, los datos del sector (y la demanda que me llega a mí) indican que las etnográficas gozan de un creciente atractivo por parte de quienes contratan investigación.
En cualquier caso, "nos incluimos" debe interpretarse como "nos introducimos".
