stallion / stud horse of the .... breed

"Del hierro" doesn't refer to the character of the horse; that would be "de hierro". "Hierro" literally refers to a "hierro de marcar", a branding iron, and to the mark made by it.

This expression is not found alone; there must be something after "hierro", and that something identifies the farm, ranch or breeding facility from which the animal comes. In practice, "hierro" means "breed". A "semental del hierro de Miura", for example, is of the Miura breed, Miura being a famous breeder of bulls and bullfighting horses.

If there is nothing after "hierro", I suppose it must mean a pure-bred stallion, but I very much doubt this.
