"Del hierro" doesn't refer to the character of the horse; that would be "de hierro". "Hierro" literally refers to a "hierro de marcar", a branding iron, and to the mark made by it.
This expression is not found alone; there must be something after "hierro", and that something identifies the farm, ranch or breeding facility from which the animal comes. In practice, "hierro" means "breed". A "semental del hierro de Miura", for example, is of the Miura breed, Miura being a famous breeder of bulls and bullfighting horses.
"Selecto, (NO DISPONIBLE) caballo con el hierro de José Luis de la Escalera, es hijo del mítico semental del hierro de Miura, Vinatero III, del que ha heredado su magnífica conformación osea."
