The word appears in isolation, on a line of its own.

I have three examples of this, in letters from a law firm. Each time, "Jednou" appears immediately above a series of numbered paragraphs putting forward various legal arguments.

I'm not sure there is very much useful context I can give.
There is the letterhead, and below that the address of the addressee. The letter is dated, so it certainly isn't sent on an unspecified date.

Below that, there is the application reference number (this concerns a trade mark application) etc., and then details of the applicant and the applicant's representative and anything else of relevance.

Below all this, all on its own, with space above and below it, is the word:

agree Zdeněk Hartmann : Tohle se mi zdá dávat největší smysl, mohlo by se jednat o to, že daný adresát obdrží jednu kopii (tedy kopií může být i víc)...

This may refer to number of copies, but it's only a guess

Unspecified date/time

It can be translated as "once" or "once upon a time" but what it really indicates in legal terms is that time is not specified because it is not known, or not specified, or both.
