It's the right sens of 'to bind' = 'to stick, jam' — but I'm not at all sure if this would be the correct term to use about timber; in fact, one might argue that it is in fact the nature of the wood that is going to cause the saw to bind.

I thought it referred to the wood excreting more residual sap when you sawed it.

: I don't think so, really; I think it is more about the fibrous structure, and how that behaves under shear strain.
