: Drop is best for the context. Fault-line scarp is too technical a geological term and it also might not be what is actually meant, especially in the 2nd instance.

bumps/steep slopes/convexo-concave
Like Drumanu 49 stated, the word could mean a lot of things, but I would suggest the above.

Projection/abrupt fall/dip
Possibilities I would consider.

ledge/lip/scarcement/(hydraulic) jump
Termium propose the following def:
scarcement = offset or retreat in the thickness of a wall or bank of earth
lip = a projecting or overhanging edge, rim or margin such as a rock on a mountainside
"ressaut d'une cascade"
hydraulic jump = sudden rise in level of surface of a stream

: "Ledge" is wrong and the other suggestions are not appropriate to the context of a walks guide.

Discussion
As Bourth says - so many possibilities.
Another possibility: www.geoportail.com (assuming this is in France). You can zoom in on aerial photos, superimpose IGN maps, and see a 3D display of the terrain.
