The word "Absatz" implies that this is a fitting (coupling) which makes it possible to connect two pipes that are not the same size.
Here's a reference from an article on piping and plumbing fittings:
"A coupling connects two pipes to each other. If the material and size of the pipe are not the same, (it) may be called a 'reducing coupling' or reducer, or an adapter."
Source: http://en.wikipedia.org/wiki/Piping_and_plumbing_fittings
As we can see here, it could also be called a 'reducing coupling' - which sounds to me like a new sex education campaign launched by the US government, but that's the world of pipes and plumbing for you!

: You didn't even address whether these are male, female, or sweated fittings...

Webster claims for nipple " a pipe coupling consisting of a short piece of tubing usually with an external screw thread at each end", but don't know if "pipe nipple" cuts it??

"pipe nipple" does get nearly 70,000 googles for what it's worth, though "pipe coupling" is worth considering, based on the Webster definition

shoulder nipple
Could be shoulder nipple, i.e. a nipple with a shoulder between two screw threads. Another possibility is offset nipple.
