La mia interpretazione ....gli stessi piatti economici insaporiti/arrichiti dal buon senso dei tempi andati

Salt sta per sapienza di cose comuni = buonsenso.

Il cibo è semplice ed economico ma forse è più genuino, nutriente e sensato (nel senso magari che usa ingredienti di stagione, o che normalmente non si utilizzano più perché richiedono troppa cottura o una lunga preparazione etc) di un ristorante di città.
