Could this just be a mistake -- someone thought "sauterelle" was "sauterial"? But why is it in the middle of an English sentence anyway?

I think they are referring to the family Acrididae - and I'd say locusts in this context.

Les sauteriaux sont des criquets non grégariaptes appartenant à l'ordre des orthoptères. Contrairement aux locustes, qui se transforment complètement lorsque leur population atteint un certain seuil de densité, les sauteriaux ne présentent que des modifications morphologiques et comportementales mineures en réaction aux effets du groupement.

Les sauteriaux sont aussi de grands ravageurs, surtout dans les pays du Sahel.

A grasshopper is a type of insect belonging to the same order as locusts, kaytdids and crickets - the Orthoptera (derived from the Greek words orthos meaning straight or rigid and ptera meaning wing). GRASSHOPPERS ARE IDENTICAL IN APPEARANCE TO LOCUSTS with which they share the family Acrididae. The only DIFFERENCE BETWEEN THE TWO types of insects is that locusts can exist in two different behavioural states (solitary and social/gregarious) whereas grasshoppers do not. When the population density is low locusts behave as individuals, much like grasshoppers. However, when the population density is high, locusts form highly mobile gregariously behaving bands of nymphs or swarms of adults.
