So I'm translating a menu and there is a dish described as "merluza costreada". I cannot for the life of me find out what the term "costreada" means, as it doesn't appear in any dictionary, but it does appear to be used in the culinary field as I've seen other dishes using the same term. Can anyone shed any light as to what it might refer to?

: Seems to be used mostly in reference to cheesy crusts in my experience. "Battered" and "breaded" would be "rebosado" and "empanizado" in Mexican Spanish, and here we see menus with descriptions like "en costra de manchego".
