Stella amorosa

This is just the litteral translation of "loving star". Also, star=stella, love=amor.

stella amoris

The "astrological" approach makes more sense, since some people believe that important things in life (like birth, death, love, money, tragedy, etc.) are guided by the stars.

STELLA means "star". AMORIS means "of love" or "pertaining to love".

Pietatis stella

In this context "love" has to translated as "pietas", more abstract than "amor" and with a feeling of protection. A good example is the star which keeps sailors.
On their ships sailors of the 10/11th century used to write "In mare irato, in subita procella, invoco te, nostra benigna stella". This sentence is the -only- one which is written in the same way in Italian as well (same meaning, naturally).
