generally the 'doorregen speklappen' are referred to just as speklappen, and are uncured bacon or pork belly slices of meat, which can be grilled (my preference), friied, or braised, etc.

: Good translation but I would never be able to find that at my butcher shop. The cuts of meat sold here are totally different from those in Holland.
