Suflado

Hi, looking for help with the term "suflado" for a recipe involving "caldo suflado."

For this recipe, they mix broth and kuzu and then they cook it down until it becomes thick. Then they spread it over a silpat and dehydrate it. This results in thin, film-like pieces of broth, which are then fried in oil and removed. The caldo suflado is crunchy-looking thin paper-like "pieces" of broth.

Any ideas of what to call this? Thanks in advance!

You might want a better-sounding word if this were a menu, where you're selling the dish to the customer. But this is a recipe, which should convey the information as clearly and simply as possible.

Is the "suflado" the brown stuff like a piece of chicken skin, draped over the top of something else?

savoury broth and kuzu wafers / crackers / thins could also be options depending on the thickness of the pieces?

Thanks for this! I considered "puffed" but the resulting broth is flat and crunchy looking and doesn't feel very puffed. I will think about this again...
