Hi, looking for help with the term "suflado" for a recipe involving "caldo suflado."
For this recipe, they mix broth and kuzu and then they cook it down until it becomes thick. Then they spread it over a silpat and dehydrate it. This results in thin, film-like pieces of broth, which are then fried in oil and removed. The caldo suflado is crunchy-looking thin paper-like "pieces" of broth.
Any ideas of what to call this? Thanks in advance!
