I think the "entrante" is the part between the points, the recess. In architecture this is translated as curved recess, so it's a possibility here.

Therefore, the way I see it is that the star has 8 points, and the 8 lower angles between the points are rounded, or curved. I can't find any specific geometry or technical drawing references, but I think this is the general idea.

Here is a quotation from an old geometry book (1841):
"P. Qué se entiende por ESTRELLA POLIGONAL?
R. Un polígono compuesto de ángulos entrantes y salientes dispuestos de modo, que entre cada dos de los últimos hay uno de los primeros.
[...] Se llaman REGULARES cuando tienen iguales entre sí, 1º todos los ángulos salientes, llamadas PUNTAS de la estrella; 2º todos sus ángulos entrantes, 3º todos sus lados."

So I think that, as Marie suggests, "entrantes" refers to the angles of the spaces between the points of the star. "Ángulo saliente" means an acute angle (less than 90º) and "ángulo entrante" means a reflex angles (more than 180º). In the case of the star these are the internal angles of the points and of the spaces between the points respectively.
